Aris, just a quick question-the best way to make a spicier(hotter) version of the tong?, we have dried chilli flakes here in the US, as well as all sorts of spicy wet and dry. At what stage do I add the spice?
thanks |

| There are several ways you can do it - you can add about 3-4g of hot chilli powder per kilo of mix - just mix it in with your spices. You can also add fresh chillies to your vinegar mix, then use that (if you use vinegar in your method). |
